A Nourishing Soup Straight From the Garden

There is something special about starting the day with a warm bowl of homemade vegetable soup made with fresh ingredients from the garden.

This simple soup combines red peppers, butternut squash, white onions, and fresh ginger for a flavorful and nourishing meal. I personally enjoy keeping mine lighter and leaving out potatoes because I like to be mindful of my calorie intake.

If you prefer a heartier bowl, potatoes can be added. The amount and ingredients can simply be adjusted based on your personal preferences and nutritional goals.

Butternut squash and red peppers provide naturally occurring vitamins, including beta-carotene and vitamin C, along with antioxidants. The vegetables also provide fiber, which is an important part of a balanced diet and supports a healthy gut while helping you feel satisfied.

The fresh ginger adds a warm, refreshing flavor that brings all the ingredients together.

For me, this is a simple reminder that healthy eating doesn't have to be complicated. Fresh vegetables, wholesome ingredients, and mindful portions can make a delicious start to the day.
